Ingredients:
1L hor water (to steam the balls)
320 gr fine bulgur
200 ml hot water
1 egg white
140 gr flour
15 gr paprika paste
15 gr tomato paste
2 gr salt and cumin
15 gr sumac and mint
2 gr black pepper
10 gr flour
For Serving:
2 garlic cloves
1 gr salt
200 ml yoghurt
For Garnishing:
15 gr butter
15 gr mint
15 gr chili pepper
To steam the balls; put hot water in a big pot and boil. Put fine bulgur in a big mixing bowl and add tomato paste, paprika paste, salt, black pepper, cumin,sumac, mint and hot water. Let bulgur gets bigger for 5 minutes. Add flour and egg white to bulgur and knead until it becomes homogenous. Take pieces as big as a walnut from the mixture and roll them between your palms. Take the flour in a wide plate and take the balls in it. Shake the plate gently and be sure all balls are covered with flour. Put the balls into boiling water slowly and not at once. Boil them for 12 minutes. To serve; grate garlic cloves and mix with yoghurt. Add salt and mix rapidly. To prepare the garnish; melt the butter in a small sauce pot. Add mint and paprika pepper, mix them and take the pot from stove. Take the balls to a serving platter. Garnish with yoghurt and sauce.
