INGREDIENTS
1 kg beef tripe
1 medium onion
1 whole garlic
2 gr salt
1 L hot water
For seasoning:
150 gr yogurt
25 gr flour
2 eggs
1 lemon juice
200 ml hot water
For serving:
10 gr butter
Cut cleaned beef tripe into large pieces and place in pot. Chop the onion and put it into the pot. Peel garlic and cut it into litte pieces and add it into the pot. Add hot water and boil the tripe for 90 minutes over medium heat. When the tripe is boiled, drain the boiled water into another pot and take the tripe on a plate. Add hot water to the pot that you filtered the water from the tripe. Cut the tripe into small cubes and put it into the pot. Boil it for 5 minutes over medium heat.
For seasoning; mix yoghurt, flour and eggs in a bowl. Add juice of lemon to it. Add water and mix thoroughly. Filter the dressing and put on the pot and sprinkle salt.
For serving; add butter.
