Grill the eggplants in an oven and let them cool. Meanwhile; chop tomatoes, parsley, peppers and onion very small. Smash the garlic and mix them. Peel the eggplants, clean them and chop very small. Drain the eggplants and add to other ingredients. Pour lemon juice and olive oil on them and mix. Serve on a flat serving platter.
