Ingredients:
3 big size eggplants
200 gr dressed Manyas cheese
For Tomato Sauce:
40 ml sunflower oil
100 ml chopped tomato
15 gr tomato paste
3 cloves garlic
4 leaves fresh basil
200 ml hot water
For Frying:
200 ml sunflower oil
Peal eggplants and slice 1 cm wide. Chop fresh basil very thin. Heat sunflower oil in pan and fry the eggplant slices until they are golden and take the extra oil away. After 5 minutes, places the slices in an oven pot and drizzle Manyas cheese on them. Place rest of the slices on the cheese and cook the dish in oven for 10 minutes at 180 degree until the cheese melts. To prepare the tomato sauce; dressed garlic cloves into sunflower oil and cook until the smell goes away. Then, add chopped tomatoes and tomato paste, boil for 5 minutes at medium fire. Pour the hot water and add chopped parsley. After 2-3 minutes, take the sauce from the stove and place the eggplants on a serving platter. Pour the sauce on eggplants and serve hot.
