Ingredients:
1.5 cups of fine bulgur for meatballs
5 spring onions
3 green peppers
2 lemons
1/2 bunch of parsley
7 tablespoons of pepper paste
4 tablespoons of hot chili pepper
200 grams of lean minced meat
2 teaspoons black pepper
3 teaspoons salt
For service:
1 lettuce
1/2 lemon
1/2 medium tomato
2 sprigs of mint and spring onion
Preparation:
Finely chop the medium-sized green pepper and spring onion, cut in half, remove the seeds and place on a plate. Finely chop the parsley. Slice the lemon half a centimeter thick. Remove the seeds from the lemon slices that you have turned into rings and put them on a plate. Transfer the fine bulgur into the tray. Put the chili pepper, pepper paste and the lemon you sliced beforehand and knead and rub with both hands. Remove the lemon peels from the bulgur that you knead for about 2 minutes. For 1 minute, add the finely chopped green onions to the bulgur you kneaded by pressing it on the tray. Start to rub and knead the bulgur you have gathered at the top of the tray by pressing it into the tray with the back of your hand and the palm of your hand. Knead the bulgur for about 10 minutes, pulling it back and forth. After this time, place the bulgur in the center of the tray. Spread it on the tray by pressing lightly with your hand. Put pepper paste, salt and black pepper on it. Add the chopped parsley and lean minced meat and knead with both hands for about 1 minute. After this time, continue scrubbing for 10 minutes. After 10 minutes of rubbing and kneading, roll the rawköft into a ball and shape it with both hands. Spread pepper paste on it and spread the paste with your hands. Leave the raw meatballs to rest for a while. When serving the rested raw meatballs, first separate the lettuce leaves and place them on the serving plate. Cut the lemon in half and place it next to the lettuce on the plate. Place green onions on opposite sides of the plate and mint sprigs on the sides of the onions. Slice the tomatoes and place them side by side on the plate. With your fingers, take an amount of the whole raw meatball that fills the palm of your hand and shape it by pressing it with the inside of your hand. Place the shaped rawköfte on a plate and serve.
