Ingredients:
300 gr cowpea
1/2 bund parsley
1 big size onion
20 ml olive oil
20 ml vinegar
1 lemon
15 gr chili pepper
Salt (optional)
1 tomato
Wash cowpea and cook in water until they get soft. After cooking, wash them again with cold water and drain. Chop parsley and onion very small. Take cowpeas in a bowl and add parsley, onion, olive oil, vinegar, lemon juice, chili pepper and salt. Peel the tomato and remove the seeds. Chop them into small cubes and garnish the salad with them.
